Description

This Funfetti Loaf Cake is a delightful treat perfect for any occasion, featuring a rich buttery flavor and colorful sprinkles throughout.


Ingredients

  • ¾ cup salted butter (room temperature)
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 eggs (room temperature)
  • ½ cup whole milk (room temperature)
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp kosher salt
  • ¼ cup sprinkles
  • 1 cup powdered sugar
  • 34 tbsp heavy cream or milk
  • ½ tsp vanilla extract
  • extra sprinkles for topping

Instructions

  1. Preheat oven to 325°F. Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Cream butter and sugar together until light and fluffy, about 2–3 minutes.
  3. Add eggs one at a time and stir in vanilla.
  4. Whisk together flour, baking powder, and salt in a separate bowl.
  5. Add dry ingredients into the bowl along with the milk and mix until just combined.
  6. Gently fold the sprinkles into the batter.
  7. Spread batter evenly into the prepared pan and top with extra sprinkles.
  8. Bake for 55–65 minutes, tenting loosely with foil if the top browns too quickly.
  9. Cool in the pan for 10–15 minutes, then remove and cool completely.
  10. Whisk glaze ingredients together and drizzle over the cooled cake.
  11. Top with additional sprinkles if desired. Let it set up for 15 minutes, slice & serve!
