Ingredients

  • ½ cup vanilla protein powder (plant-based or whey)
  • ¼ cup freeze-dried strawberries (ground into powder)
  • 2 tablespoons cream cheese, softened
  • 3 tablespoons maple syrup or honey
  • 1 tablespoon almond milk (or milk of choice)
  • ½ teaspoon vanilla extract
  • Pinch of sea salt
  • Optional: extra crushed freeze-dried strawberries for coating

Instructions

  1. Prep the strawberries: If you’re using whole freeze-dried strawberries, crush them into a fine powder using a food processor or by placing them in a zip-top bag and rolling over them with a rolling pin. Set aside a little for coating the balls later if you’d like an extra pop of color and flavor.
  2. Mix the dry ingredients: In a large bowl, combine the almond flour, vanilla protein powder, crushed freeze-dried strawberries, and a pinch of salt. Stir until everything is well mixed and evenly colored.
  3. Add the wet ingredients: Add the softened cream cheese, maple syrup (or honey), almond milk, and vanilla extract. Stir until a thick dough forms. If it’s too dry, add a splash more milk; if too sticky, add a bit more almond flour or protein powder.
  4. Roll into balls: Scoop out a tablespoon of dough and roll it between your palms to form a smooth ball. Repeat with the remaining dough. You should get about 12–14 balls, depending on size.
  5. Coat and chill: Optional: Roll the balls in more crushed strawberries for a pretty, slightly tart coating. Place the balls in an airtight container and chill in the fridge for about 30 minutes to firm up. They’ll hold together better and the flavors meld even more.
