Description

A fresh and healthy mixed greens chicken bowl, perfect for a light lunch or dinner.


Ingredients

  • 4 cups mixed greens
  • 400 g chicken breast
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp paprika
  • 1 cup cherry tomatoes
  • ½ cucumber
  • 1 cup corn
  • 1 avocado
  • ½ cup guacamole
  • Chili flakes
  • 1 tbsp lime juice

Instructions

  1. Season and cook chicken until 74°C internally; slice.
  2. Prepare vegetables and arrange over greens.
  3. Add avocado and guacamole.
  4. Sprinkle chili flakes and drizzle lime juice.
  5. Serve immediately.
