A delicious creamy chicken and mushroom dish that is easy to make and packed with flavor.

- 4 thinly-cut chicken breasts
- 1/3 cup all-purpose flour
- to taste Salt and pepper
- 2 Tablespoons olive oil
- 2 Tablespoons butter
- 16 oz mushrooms (sliced)
- 2 cloves garlic (minced)
- 2 Tablespoons all-purpose flour
- 1 cup chicken broth
- 1/3 cup heavy cream
- 1/2 teaspoon Italian seasoning
- to taste Salt and pepper
Instructions
- Season both sides of the chicken breasts with salt and pepper.
- Pour the flour into a plate or a shallow bowl, and lightly coat each piece of chicken. Shake off any excess flour.
- Heat a large skillet over high heat, then add the olive oil to the pan. Once hot, add the chicken and cook for 2-3 minutes on each side, until browned. Remove the meat from the pan and keep warm.
- Place the pan over medium-high heat and add the butter. When the butter is melted, add the mushrooms and cook for about 5 minutes, until they cook down and begin to soften.
- Add the garlic and sauté in the pan for 1-2 minutes, until you can smell the garlic.
- Put the flour in the skillet and stir it into the mushroom mixture until it’s no longer white.
- Slowly whisk in the chicken broth and the heavy cream. Once mixed, bring the sauce to a simmer and cook for about 5 minutes, until it starts to thicken.
- Add the Italian seasoning and stir it in, then add the chicken back to the skillet. Cook for a couple of minutes until the meat is cooked all the way through.
- Season to taste with salt and pepper, then serve the chicken hot with the sauce poured over it. Garnish with fresh parsley or other herbs.
Notes
- Feel free to add other vegetables like spinach or bell peppers for extra nutrition.
- Serve over pasta or rice for a complete meal.
