- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- ½ tsp cinnamon
- ½ tsp turmeric
- ¼ tsp cayenne pepper (optional)
- 1 large sweet potato, peeled and diced
- 1 can (19 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- Salt and pepper to taste
- Juice of ½ lemon
- Fresh cilantro or parsley, for garnish
Instructions
- Sauté the aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for about 5 minutes, until it becomes translucent and soft. Stir in the garlic and fresh ginger, cooking for another minute until fragrant.
- Toast the spices: Sprinkle in the cumin, coriander, paprika, cinnamon, turmeric, and cayenne (if using). Stir them into the onion mixture and let them toast for 30 seconds to bring out their aroma and deepen the flavor.
- Add sweet potatoes and chickpeas: Toss in the diced sweet potatoes and chickpeas, stirring so they are coated with the spice mixture.
- Pour in broth and tomatoes: Add the vegetable broth and canned tomatoes (with their juices). Stir well to combine everything.
- Simmer and soften: Bring the soup to a boil, then reduce the heat and let it simmer gently for 25 to 30 minutes, or until the sweet potatoes are fork-tender.
- Season and brighten: Add salt and pepper to taste. Squeeze in fresh lemon juice to brighten the flavors. For a creamier texture, you can blend half of the soup using an immersion blender or leave it chunky — both versions are equally delicious.
- Garnish and serve: Ladle the soup into bowls and garnish with chopped cilantro or parsley. Serve hot with warm flatbread or a scoop of rice.
