- 2 cups grilled or shredded chicken breast
- 4 flour tortillas
- 1 can black beans
- 1 cup cheddar cheese
- 1 cup salsa
- 1 bell pepper
- 1 onion
- 1 cup lettuce
- 1 sliced avocado or guacamole
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 tablespoons olive oil
Instructions
- Start by marinating your chicken in a mix of lime juice, cumin, chili powder, garlic powder, and salt. Let it sit for about 30 minutes to absorb the flavors.
- Grill the marinated chicken over medium-high heat for about 6-7 minutes per side, or until fully cooked. If you don’t have a grill, you can pan-sear it in a skillet. Once cooked, let it rest for a few minutes before slicing or shredding.
- While the chicken is cooking, slice your bell peppers and onions. You can sauté them in a little olive oil for added flavor, or leave them raw for a crunchy texture.
- Heat the tortillas slightly in a microwave or on a skillet to make them more pliable. This helps prevent tearing when you wrap them.
- Lay a tortilla flat and start layering your ingredients. Begin with a generous scoop of shredded chicken, then add black beans, sautéed vegetables, cheese, avocado, and a dollop of salsa.
- Fold in the sides of the tortilla and then roll it tightly from the bottom up. Secure with a toothpick if needed.
- Cut the wrap in half diagonally and serve immediately with extra salsa or chips on the side.
