Description
A rich and decadent chocolate mousse cake made with dark chocolate and whipped cream.
Ingredients

- 8 ounces dark chocolate (70% cocoa or higher)
- 4 tablespoons unsalted butter
- 4 large eggs, separated
- ½ cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: Cocoa powder or shaved chocolate for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a heatproof bowl, combine the dark chocolate and butter. Melt them together over a double boiler or in the microwave, stirring until smooth. Set aside to cool slightly.
- In another bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick. Stir in the cooled chocolate mixture and vanilla extract until well incorporated.
- In a clean bowl, beat the egg whites and pinch of salt until soft peaks form. Gradually add a tablespoon of sugar and continue to beat until stiff peaks form.
- Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.
- In a separate bowl, whip the heavy cream until soft peaks form. Fold it into the chocolate mixture gently until no streaks remain.
- Pour the mousse mixture into the greased cake pan and smooth the top. Bake for about 30 minutes, or until the edges are set but the center is still slightly wobbly.
- Remove the cake from the oven and let it cool in the pan for about 15 minutes. Then, transfer it to the refrigerator to chill for at least 3 hours, or overnight if possible.
- If you choose, melt additional dark chocolate with cream to create a ganache for topping the cake once it has chilled.
- Once fully chilled, you can spread the ganache on top or serve plain, garnished with cocoa powder or chocolate shavings as desired.
Notes
- This cake can be made a day in advance for best results.
- Experiment with different garnishes such as berries or whipped cream.
