  • 4 cups chicken broth (low sodium)
  • 1 teaspoon garlic powder

  • 8 oz cream cheese, cubed
  • 1 cup heavy cream
  • 1½ cups shredded mozzarella cheese
  • 1½ cups chopped spinach (fresh or frozen)
  • 20 oz refrigerated cheese tortellini
  • Optional: chopped parsley for garnish

Instructions

  1. Layer and Cook the Chicken: Start by placing your chicken breasts at the bottom of the crockpot. Pour in the chicken broth and season with garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir gently to combine, then cover and cook on low for 4–5 hours or on high for about 2 hours.
  2. Shred the Chicken: Once the chicken is fully cooked and tender, use two forks to shred it directly in the crockpot. This helps the chicken soak up all the herby broth and makes it incredibly flavorful.
  3. Add Creamy Ingredients: Next, add the cubed cream cheese, heavy cream, and shredded mozzarella. Stir everything together until the cheese begins to melt and create a smooth, velvety sauce. Let it cook for another 20–30 minutes, stirring occasionally to help everything blend together.
  4. Stir in the Spinach and Tortellini: Add in the chopped spinach and the refrigerated tortellini. Stir gently, making sure the pasta is fully submerged in the sauce. Cover again and cook for an additional 15–20 minutes, or until the tortellini is tender and cooked through.
  5. Serve and Enjoy: Once the tortellini is cooked and everything is creamy and heated through, give the dish one final stir. Serve warm with a sprinkle of fresh parsley on top if you’d like a pop of color and freshness.
