Description
A delicious and quick lemon garlic chicken pasta tossed with fresh spinach and Parmesan cheese.
Ingredients

- 2 pieces chicken breasts (boneless and skinless)
- 4 cups fresh spinach (roughly chopped)
- 3 cloves garlic (finely chopped)
- 8 oz pasta (spaghetti or fettuccine, cooked al dente)
- 2 tablespoons extra-virgin olive oil
- 1/2 lemon (juice)
- 1/2 cup Parmesan cheese (freshly grated)
- to taste salt
- to taste freshly cracked black pepper
Instructions
- Bring salted water to a boil and cook pasta until al dente.
- Drain pasta and reserve a small amount of cooking water.
- Heat olive oil in a skillet over medium heat.
- Add sliced chicken and cook until lightly golden.
- Add garlic and sauté briefly.
- Add spinach and cook until wilted.
- Add cooked pasta to the skillet.
- Stir in lemon juice and Parmesan cheese.
- Add a splash of pasta water if needed to loosen the sauce.
- Season with salt and pepper before serving.
Notes
- For best results, use freshly grated Parmesan cheese.
- You can substitute the pasta with your preferred type.
