Description

A delicious and quick lemon garlic chicken pasta tossed with fresh spinach and Parmesan cheese.


Ingredients

Scale
  • 2 pieces chicken breasts (boneless and skinless)
  • 4 cups fresh spinach (roughly chopped)
  • 3 cloves garlic (finely chopped)
  • 8 oz pasta (spaghetti or fettuccine, cooked al dente)
  • 2 tablespoons extra-virgin olive oil
  • 1/2 lemon (juice)
  • 1/2 cup Parmesan cheese (freshly grated)
  • to taste salt
  • to taste freshly cracked black pepper

Instructions

  1. Bring salted water to a boil and cook pasta until al dente.
  2. Drain pasta and reserve a small amount of cooking water.
  3. Heat olive oil in a skillet over medium heat.
  4. Add sliced chicken and cook until lightly golden.
  5. Add garlic and sauté briefly.
  6. Add spinach and cook until wilted.
  7. Add cooked pasta to the skillet.
  8. Stir in lemon juice and Parmesan cheese.
  9. Add a splash of pasta water if needed to loosen the sauce.
  10. Season with salt and pepper before serving.

Notes

  • For best results, use freshly grated Parmesan cheese.
  • You can substitute the pasta with your preferred type.
