Description

A delicious and refreshing cherry chicken salad served in whole grain sandwiches.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup cherries, pitted and halved
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/4 cup walnuts, chopped (can substitute with pecans)
  • 1/2 cup Greek yogurt (or mayonnaise)
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices bread (whole grain or your choice)
  • 4 leaves lettuce (for serving)

Instructions

  1. In a mixing bowl, combine the shredded chicken, cherries, celery, red onion, and walnuts.
  2. In a separate bowl, mix together the Greek yogurt, honey, lemon juice, salt, and black pepper.
  3. Pour the yogurt mixture over the chicken mixture and stir until well combined.
  4. Lay out the slices of bread and place a leaf of lettuce on each slice.
  5. Spoon the cherry chicken salad onto four of the slices, then top with the remaining slices of bread.
  6. Cut the sandwiches in half and serve immediately.

Notes

  • Can substitute walnuts with pecans if desired.
  • For a lighter version, use Greek yogurt instead of mayonnaise.
