Description
A delicious and refreshing cherry chicken salad served in whole grain sandwiches.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cherries, pitted and halved
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup walnuts, chopped (can substitute with pecans)
- 1/2 cup Greek yogurt (or mayonnaise)
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices bread (whole grain or your choice)
- 4 leaves lettuce (for serving)
Instructions
- In a mixing bowl, combine the shredded chicken, cherries, celery, red onion, and walnuts.
- In a separate bowl, mix together the Greek yogurt, honey, lemon juice, salt, and black pepper.
- Pour the yogurt mixture over the chicken mixture and stir until well combined.
- Lay out the slices of bread and place a leaf of lettuce on each slice.
- Spoon the cherry chicken salad onto four of the slices, then top with the remaining slices of bread.
- Cut the sandwiches in half and serve immediately.
Notes
- Can substitute walnuts with pecans if desired.
- For a lighter version, use Greek yogurt instead of mayonnaise.
