Description

This delicious Apple Fritter Cake combines the flavors of tender cake and sweet apple filling, topped with a sweet glaze, perfect for any dessert lover.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 cups apples, peeled and diced
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup powdered sugar
  • 23 tablespoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper. This helps the cake lift out easily once baked.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set the mixture aside while you prepare the batter.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy. This step creates the soft texture that makes the cake tender and airy.
  4. Mix in the eggs one at a time, followed by the vanilla extract. The batter will become smooth and slightly creamy.
  5. Gradually add the dry ingredients to the batter, alternating with milk. Stir until just combined. Avoid overmixing to keep the cake soft.
  6. In a separate bowl, toss the diced apples with brown sugar and cinnamon. The aroma at this stage already hints at the cozy flavor that will fill your kitchen.
  7. Spread half of the cake batter into the prepared baking dish. Spoon half of the apple mixture evenly over the batter. Add the remaining batter, then top with the rest of the apples.
  8. Place the cake in the oven and bake for about 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake cools slightly, whisk together powdered sugar, milk, and vanilla extract until smooth.
  10. Drizzle the glaze over the warm Apple Fritter Cake. It will gently soak into the top, creating a sweet finish reminiscent of classic apple fritters.

Notes

  • This cake is best enjoyed warm with a drizzle of glaze.
