Ingredients
Scale
- 12 oz spaghetti
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- to taste salt
- to taste pepper
- for garnish fresh basil
Instructions
- In a large pot, bring water to a boil. Add a generous amount of salt and the spaghetti. Cook according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, but be careful not to let it brown.
- Toss in the halved cherry tomatoes and fresh spinach. Sauté until the tomatoes are juicy and the spinach wilts, about 3-4 minutes.
- Pour in the heavy cream and stir well. Add the grated Parmesan cheese, salt, and pepper, mixing until the cheese melts and the sauce reaches a creamy consistency.
- Add the drained spaghetti to the skillet. Toss everything together until the pasta is fully coated in the creamy sauce.
- Serve immediately garnished with fresh basil and an extra sprinkle of Parmesan if desired.
