Description

Ingredients

  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, bring water to a boil. Add a generous amount of salt and the spaghetti. Cook according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, but be careful not to let it brown.
  3. Toss in the halved cherry tomatoes and fresh spinach. Sauté until the tomatoes are juicy and the spinach wilts, about 3-4 minutes.
  4. Pour in the heavy cream and stir well. Add the grated Parmesan cheese, salt, and pepper, mixing until the cheese melts and the sauce reaches a creamy consistency.
  5. Add the drained spaghetti to the skillet. Toss everything together until the pasta is fully coated in the creamy sauce.
  6. Serve immediately garnished with fresh basil and an extra sprinkle of Parmesan if desired.
