Description

This dish features tender chicken thighs marinated in a flavorful blend of soy sauce and spices.

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs
  • 1/3 cup soy sauce
  • 1/3 cup mirin
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • to taste cornstarch (for thickening)
  • to taste sesame seeds (for garnish)
  • to taste green onions (for garnish)

Instructions

  1. Marinate the chicken: Whisk together soy sauce, mirin, brown sugar, rice vinegar, ginger, and garlic in a bowl. Add chicken thighs and marinate for at least 30 minutes.
  2. Cook the chicken: In a hot skillet, cook the marinated chicken for 5-7 minutes per side until golden brown. Remove from heat and bring to a boil, then simmer. Mix cornstarch with water and whisk into sauce until thickened.
  3. Combine: Slice the cooked chicken and return to skillet with sauce. Toss to coat and serve over warm rice garnished with sesame seeds and green onions.

Notes

  • Ensure the chicken is well-coated in the marinade for maximum flavor.
  • Adjust the amount of cornstarch depending on your desired sauce thickness.
