Key Ingredients for Sweet and Sour Beef (Slow Cooker)
Beef Chuck Roast
When preparing sweet and sour beef, choosing the right cut of meat is crucial. I recommend using a beef chuck roast because it becomes incredibly tender in the slow cooker. The marbling in this cut ensures that the flavor infuses beautifully during the cooking process.
Bell Peppers
Fresh bell peppers add a fantastic crunch and vibrant color to the dish. I personally love using a mix of red, yellow, and green for a visually appealing presentation. They not only enhance the dish’s flavor but also contribute a healthy dose of vitamins!
Pineapple
Canned pineapple chunks are ideal here, providing that perfect balance of sweetness and acidity. The juice helps to create a delicious sauce that clings to the beef and vegetables. If you’re feeling adventurous, try adding some fresh pineapple for an even juicier experience.
Sauces
You’ll need soy sauce, ketchup, and vinegar to create the quintessential sweet and sour sauce. The soy sauce gives it that umami depth, while the ketchup and vinegar combine for the classic sweet and tangy flavor profile.
Brown Sugar
A touch of brown sugar is essential to round out the flavors. It adds a rich sweetness that complements the tartness of the pineapple and the saltiness of the soy sauce perfectly. Don’t skip this ingredient; it’s key to achieving that classic balance in sweet and sour beef.

Cooking Tips and Notes
Best Practices for Slow Cooking
Creating sweet and sour beef in your slow cooker delivers comforting flavors that are hard to resist. To ensure your dish turns out perfectly every time, consider these simple tips that make a significant difference.
-
Prep Ahead: Take a little time to chop your vegetables and marinate your beef in advance. This allows the flavors to meld and makes your cooking day smoother.
-
Don’t Overcrowd: While it’s tempting to pile in all your ingredients, leaving enough space allows the heat to circulate and cook your meal evenly. Follow the recipe’s recommended quantities for the best results.
-
Layer Wisely: Place denser vegetables like carrots and onions at the bottom of the slow cooker, as they take longer to cook. This ensures everything is tender by the end of the cooking time.
-
Keep It Closed: Resist the urge to peek! Each time you open the lid, precious heat escapes, potentially extending cooking time.
-
Adjust Seasonings: Cooking in a slow cooker can sometimes mute flavors, so don’t shy away from tasting and adjusting seasonings towards the end. Adding a splash of vinegar or soy sauce can elevate your sweet and sour beef to new heights.
With these tips in mind, you’ll create a sweet and sour beef dish that’s full of depth and deliciousness. Enjoy your culinary adventure!

Sweet and Sour Beef
- Total Time: 8 hours 15 minutes
- Yield: 6 servings 1x
- Diet: Gluten-Free
Description
Deliciously tender beef chuck roast slow-cooked in a flavorful sweet and sour sauce.
Ingredients
- 4 lb. boneless chuck roast, trimmed well
- 2 tsp. olive oil
- 1 steak rub, to season meat (see notes)
- black pepper, to season meat
- 1 T onion powder
- 1 T garlic powder
- 2 T ginger puree (see notes)
- 2 T Monkfruit Sweetener or sweetener of your choice
- 1/4 cup unseasoned rice vinegar
- one 14 oz. can crushed tomatoes
- 2 T soy sauce
- 1 tsp. anchovy paste, optional
Instructions
- Trim as much fat as you can from the roast, and cut if necessary to fit into the Crockpot. Rub the meat well with steak seasoning and black pepper.
- Heat olive oil in a large frying pan and brown the roast well on both sides. This will take a few minutes; don’t rush the browning step. Put the browned roast into the slow cooker.
- Deglaze the pan while the meat browns, combine onion powder, garlic powder, ginger puree, sweetener of your choice, rice vinegar, tomatoes, soy sauce, and anchovy paste (if using) in a food processor. Process several minutes with steel blade until tomatoes are pureed and ingredients are well combined.
- Put the pureed sauce into the frying pan where you browned the meat and simmer on low heat until the sauce thickens; you should be able to draw a spoon through it and have the sauce stay together.
- Once it’s thickened to that point, pour the sauce mixture over the meat in the slow cooker.
- Cook on low 7-8 hours (or more) or on high for 3-4 hours, or until the meat is very tender. (If I’m home I usually turn it a couple of times, but it’s not necessary.)
- Remove the meat from the slow cooker and keep warm. Skim off any visible fat from the sauce mixture if needed, or use a fat separator.
- Slice the pieces of roast and serve the Sweet and Sour Beef hot, with sauce spooned over the meat.
Notes
- Notes on steak rub: Use your favorite blend or a mix of salt, pepper, garlic, and paprika.
