Key Ingredients for Sweet and Sour Beef
Sweet and sour beef brings a delightful balance of flavors that can transform a regular weeknight dinner into an unforgettable meal. To create this dish, selecting the right ingredients is crucial for achieving that signature taste.
Beef: I recommend using chuck roast for this recipe. It’s affordable and becomes wonderfully tender when slow-cooked, absorbing all the sweet and tangy goodness of the sauce.
Bell Peppers: I prefer a mix of red and green bell peppers for their vibrant colors and distinct flavors. They add a crunch and freshness that complements the dish perfectly.
Pineapple Chunks: Fresh or canned pineapple brings the sweet element to our sauce. I love using canned pineapple packed in juice, as it balances the sour notes beautifully.
Soy Sauce: A robust flavor comes from soy sauce and provides the savory base for the sauce. Low-sodium varieties are great if you’re watching your salt intake.
Vinegar: I typically use rice vinegar for its mild tang, which enhances the sour aspect without overpowering the dish.
Brown Sugar: Adding brown sugar gives the dish a deeper sweetness that rounds out the flavors, making each bite deliciously engaging.
By choosing these key ingredients, your sweet and sour beef will become a standout dish everyone will love!

Cooking Tips and Notes for Sweet and Sour Beef
Creating the perfect Sweet and Sour Beef in a slow cooker goes beyond just following the recipe—it’s about harnessing the art of slow cooking to develop rich, layered flavors. My own journey with this dish has transformed family dinners into memorable feasts, each bite bursting with tangy sweetness.
Best Practices for Slow Cooking
To ensure your Sweet and Sour Beef comes out incredibly tender and flavorful, consider these tips:
- Choose the Right Cut of Beef: Opt for tougher cuts like chuck roast or brisket. These cuts break down beautifully over time in the slow cooker, resulting in melt-in-your-mouth tenderness.
- Sear Before Slow Cooking: Take a few minutes to sear the beef on all sides. This adds a depth of flavor that transforms your dish into something special.
- Layer Ingredients: Start with vegetables like onions and bell peppers at the bottom of the slow cooker, followed by the beef and sauce on top. This prevents burning and promotes even cooking.
- Don’t Skip the Cornstarch: Adding a cornstarch slurry at the end thickens the sauce nicely. It makes for a perfect glaze that clings to the beef and vegetables.
- Adjust Timing for Doneness: Keep in mind that every slow cooker is different. Check your Sweet and Sour Beef a bit earlier to ensure it’s cooked to perfection.
By following these best practices, you’ll uncover the rich, sweet, and tangy flavors that define this beloved dish. Happy cooking!

How can I adjust the sweetness in this dish?
The beauty of Sweet and Sour Beef lies in its balance of flavors, but you can easily modify the sweetness to suit your taste. If you prefer a tangier profile, reduce the sugar or sweetener you’re using. Conversely, if you want to enhance the sweetness, consider adding a splash of honey or a bit more pineapple juice. Taste-testing during cooking is always a smart move!
Can I use a different cut of meat?
Absolutely! While flank steak is often recommended for its heartiness, you can use cuts like sirloin or even chuck roast if that’s what you have. Just bear in mind that tougher cuts might require a bit more cooking time to become tender in the slow cooker.
What is the best way to store leftovers?
Storing your Sweet and Sour Beef is simple! Make sure to let it cool completely before transferring it to an airtight container. It can be stored in the fridge for 3-4 days or frozen for up to three months. When reheating, do so gently to maintain the softness of the beef.

Sweet and Sour Beef
- Total Time: 8 hours 20 minutes
- Yield: 6 servings 1x
- Diet: Gluten-Free
Description
A delicious slow-cooked beef roast with a sweet and tangy sauce.
Ingredients
- 4 lb. boneless chuck roast, trimmed well
- 2 tsp. olive oil
- steak rub, to season meat (see notes)
- black pepper, to season meat
- 1 T onion powder
- 1 T garlic powder
- 2 T ginger puree (see notes)
- 2 T Monkfruit Sweetener or sweetener of your choice
- 1/4 cup unseasoned rice vinegar
- one 14 oz. can crushed tomatoes
- 2 T soy sauce
- 1 tsp. anchovy paste, optional
Instructions
- Trim as much fat as you can from roast, and cut if necessary to fit into Crockpot. Rub meat well with steak seasoning and black pepper.
- Heat olive oil in a large frying pan and brown roast well on both sides. This will take a few minutes; don’t rush the browning step. Put browned roast into slow cooker.
- Deglaze the pan while meat browns, combine onion powder, garlic powder, ginger puree, sweetener of your choice, rice vinegar, tomatoes, soy sauce, and anchovy paste (if using) in food processor. Process several minutes with steel blade until tomatoes are pureed and ingredients are well combined.
- Put the pureed sauce into the frying pan where you browned the meat and simmer on low heat until the sauce thickens; you should be able to draw a spoon through it and have the sauce stay together.
- Once it’s thickened to that point, pour sauce mixture over the meat in the slow cooker.
- Cook on low 7-8 hours (or more) or on high for 3-4 hours, or until meat is very tender. (If I’m home I usually turn it a couple of times, but it’s not necessary.)
- Remove meat from slow cooker and keep warm. Skim off any visible fat from sauce mixture if needed, or use a fat separator.
- Slice the pieces of roast and serve the Sweet and Sour Beef hot, with sauce spooned over meat.
Notes
- Steak rub can be any preferred mix of spices.
- Ginger puree can be substituted with fresh grated ginger if unavailable.
