Key Ingredients for Sweet and Sour Beef
Creating a delightful Sweet and Sour Beef dish in your slow cooker means sourcing the best ingredients. Let’s explore what you’ll need to elevate this dish.
-
Beef Chuck Roast: I recommend using a beef chuck roast for this recipe. Its marbling ensures tenderness during cooking, making every bite melt in your mouth. For a great texture, cutting it into bite-sized pieces helps it absorb the sweet and tangy sauce beautifully.
-
Bell Peppers: Colorful bell peppers add not only vibrant hues to your dish but also a nuanced crunch. I often prefer red and yellow for their sweetness, which complements the dish perfectly.
-
Pineapple Chunks: Fresh or canned pineapple enhances the sweet aspect of the dish. However, I always go for fresh pineapple when available; it’s juicier and has a vibrant flavor that’s simply unmatched.
-
Soy Sauce: A staple in Asian cuisine, soy sauce adds depth and umami. Opt for low-sodium soy sauce if you’re watching your salt intake, ensuring a balanced flavor.
-
Brown Sugar: This is crucial for creating that sweet kick. The molasses in brown sugar gives a rich, caramel-like essence, beautifully balancing the savory elements.
-
Rice Vinegar: For that quintessential tang, rice vinegar is a must. It’s milder than regular vinegar, adding the right amount of acidity without overwhelming the dish.
-
Garlic and Ginger: These aromatics bring a fragrant warmth to the beef, making it irresistible. Fresh garlic and ginger are recommended for their pungent flavors.
With these key ingredients, your Sweet and Sour Beef will be nothing short of exquisite. Trust me, your slow cooker will become your best friend as you immerse yourself in this delightful culinary journey.

Cooking Tips and Notes for Sweet and Sour Beef

As you watch the flavors meld together over time, you’ll appreciate each infusion that transforms simple ingredients into a hearty meal.
Choosing Your Beef
Opt for cuts like chuck roast or brisket that become tender over slow cooking. These cuts are perfect for absorbing the sweet and tangy sauce, ensuring every bite is packed with flavor. If you prefer a leaner option, sirloin can also work, but be mindful that it may not become as tender.
Balancing Sweetness and Tartness
Achieving the perfect balance of sweetness and sourness is key to a delightful dish. Don’t hesitate to adjust the sweetness of your sauce based on your personal preference. A splash more vinegar or a touch of sugar can make all the difference.
Thickening the Sauce
If you prefer a thicker sauce, consider mixing a tablespoon of cornstarch with cold water in the last hour of cooking. This step will give your Sweet and Sour Beef a luscious consistency, perfect for serving over rice.
Garnishing for a Fresh Finish
Finally, don’t forget to garnish your dish! A sprinkle of chopped green onions or sesame seeds not only adds a pop of color but also enhances the overall flavor. They bring a fresh contrast to the dish, elevating your meal from good to gourmet.
Enjoy the journey of creating your Sweet and Sour Beef! Each step offers a chance to personalize the dish and make it truly yours.

Sweet and Sour Beef
- Total Time: 8 hours 15 minutes
- Yield: 6 servings 1x
- Diet: Gluten-Free
Description
A delicious slow-cooked Sweet and Sour Beef made with tender boneless chuck roast and a flavorful sauce.
Ingredients
- 4 lb. boneless chuck roast, trimmed well
- 2 tsp. olive oil
- 1 steak rub, to season meat
- to taste black pepper, to season meat
- 1 T onion powder
- 1 T garlic powder
- 2 T ginger puree
- 2 T Monkfruit Sweetener or sweetener of your choice
- 1/4 cup unseasoned rice vinegar
- 1 can (14 oz.) crushed tomatoes
- 2 T soy sauce
- 1 tsp. anchovy paste, optional
Instructions
- Trim as much fat as you can from roast, and cut if necessary to fit into Crockpot. Rub meat well with steak seasoning and black pepper.
- Heat olive oil in a large frying pan and brown roast well on both sides. This will take a few minutes; don’t rush the browning step. Put browned roast into slow cooker.
- Deglaze the pan while meat browns, combine onion powder, garlic powder, ginger puree, sweetener of your choice, rice vinegar, tomatoes, soy sauce, and anchovy paste (if using) in food processor. Process several minutes with steel blade until tomatoes are pureed and ingredients are well combined.
- Put the pureed sauce into the frying pan where you browned the meat and simmer on low heat until the sauce thickens; you should be able to draw a spoon through it and have the sauce stay together.
- Once it’s thickened to that point, pour sauce mixture over the meat in the slow cooker.
- Cook on low for 7-8 hours (or more) or on high for 3-4 hours, or until meat is very tender. (If I’m home I usually turn it a couple of times, but it’s not necessary.)
- Remove meat from slow cooker and keep warm. Skim off any visible fat from sauce mixture if needed, or use a fat separator.
- Slice the pieces of roast and serve the Sweet and Sour Beef hot, with sauce spooned over meat.
Notes
- Steak rub can be of your choice; check consistency and flavor.
- Ginger puree can also be substituted with fresh grated ginger.
