- 4 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- Fresh parsley, chopped, for garnish
Instructions
- Start by seasoning the chicken thighs generously with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken thighs, skin side down, and sear until the skin is golden brown and crispy, about 6-8 minutes. Flip the thighs and cook for an additional 5-7 minutes until fully cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the chopped onion. Sauté until the onion is translucent and lightly golden, about 4-5 minutes.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Pour in the chicken broth, scraping the bottom of the skillet to deglaze and release any browned bits. Stir in the Worcestershire sauce, dried thyme, and paprika.
- Return the chicken thighs to the skillet, skin side up, and let them simmer in the broth for about 10 minutes, allowing the flavors to meld.
- In a separate bowl, whisk together the heavy cream and flour until smooth, then gradually stir the mixture into the skillet. Increase the heat slightly and let the gravy thicken, stirring frequently for about 5 minutes.
- Once the gravy has thickened to your desired consistency, remove from heat and garnish with freshly chopped parsley before serving.
Notes
- For an extra kick, add a splash of hot sauce to the gravy.
- This dish pairs well with rice or mashed potatoes.
