- 1 cup heavy cream
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, melt the unsalted butter over medium heat.
- Add the finely chopped onion and sauté for about 5 minutes, until it becomes translucent and soft.
- Stir in the minced garlic and sauté for an additional minute, making sure not to let it burn.
- Add the diced potatoes and sliced mushrooms to the pot, stirring well to combine with the onions and garlic.
- Pour in the vegetable or chicken broth, ensuring that all the ingredients are well submerged.
- Season the mixture with dried dill, salt, and black pepper. Bring the soup to a gentle boil over medium-high heat.
- Once boiling, reduce the heat to low and cover the pot. Allow the soup to simmer for about 20 minutes, or until the potatoes are tender.
- After the potatoes are cooked through, use an immersion blender to puree the soup to your desired consistency (you can leave it slightly chunky for added texture).
- Stir in the heavy cream, heating the soup gently to warm through without boiling.
- Taste the soup and adjust seasoning if needed.
- Ladle the soup into bowls and garnish with fresh parsley before serving.

- For a vegan version, replace the heavy cream with coconut cream and unsalted butter with olive oil.
