Mediterranean Shrimp with Spinach

Description

A delicious and healthy Mediterranean dish featuring shrimp and spinach.


Ingredients

Scale
  • 14 oz. can petite diced tomatoes, drained
  • 2 T olive oil
  • 1 large green bell pepper, diced in 1/2 inch pieces
  • 1/2 large onion, diced in 1/2 inch pieces
  • 1 tsp. finely minced garlic
  • 1 tsp. Italian Herb Blend
  • 1/2 cup water with one cube Knorr Shrimp Bouillon (or 1 cup chicken or fish stock reduced to 1/2 cup if using stock)
  • Salt and fresh-ground black pepper to taste
  • 1 lb. raw jumbo shrimp, thawed, shelled, and deveined
  • 2 T capers (or less)
  • 24 oz. spinach leaves

Instructions

  1. Thaw shrimp overnight in the fridge or in the plastic bag in cool water if in a pinch.
  2. Peel away shells and remove the vein that runs along the back if needed.
  3. Drain the tomatoes into a colander placed in the sink and let most of the juice drain off.
  4. Chop green pepper and onion, and prepare the garlic, capers, and Italian Herb Blend.
  5. Dissolve the Knorr Shrimp Bouillon cube in hot water, or reduce chicken or fish stock to 1/2 cup.
  6. Heat 1 tablespoon of oil in a large frying pan, add green bell pepper and onion, and sauté over medium-high heat until slightly browned, about 3-4 minutes.
  7. Add minced garlic and Italian Herb Blend and cook for 1-2 minutes more.
  8. Add drained tomatoes and 1/2 cup shrimp bouillon mixture or reduced stock, and simmer over low heat for about 10 minutes.
  9. While this simmers, wash spinach in a salad spinner if needed.
  10. Heat second tablespoon of oil in another large frying pan, add spinach, and turn over until wilted, about 1-2 minutes.
  11. Add shrimp and capers to the cooked mixture and cook until shrimp are pink and firm, about 3-4 minutes.
  12. Season to taste with salt and fresh-ground black pepper.
  13. Divide wilted spinach into four bowls and top each with 1/4 of the shrimp mixture.
  14. Serve hot.

Notes

  • Most shrimp come deveined now, even when they’re in the shell.
  • Affiliate links for Italian Herb Blend, Knorr Shrimp Bouillon, and salad spinner could be added for user convenience.
