Mediterranean Shrimp with Spinach

Description

A delicious shrimp dish featuring tomatoes, bell peppers, onions, and spinach, perfect for a healthy meal.


Ingredients

Scale
  • 1 can (14 oz.) petite diced tomatoes, drained
  • 2 tablespoons olive oil
  • 1 large green bell pepper, diced in 1/2 inch pieces
  • 1/2 large onion, diced in 1/2 inch pieces
  • 1 teaspoon finely minced garlic
  • 1 teaspoon Italian Herb Blend
  • 1/2 cup water with one cube Knorr Shrimp Bouillon
  • to taste salt and fresh-ground black pepper
  • 1 pound raw jumbo shrimp, thawed, shelled, and deveined
  • 2 tablespoons capers
  • 24 oz. spinach leaves

Instructions

  1. Thaw shrimp overnight in the fridge or in a plastic bag in cool water.
  2. Peel shells and remove the vein from the shrimp if necessary.
  3. Drain the tomatoes in a colander to let most of the juice drain off.
  4. Chop the green pepper and onion, and prepare the garlic, capers, and Italian Herb Blend.
  5. Dissolve the Knorr Shrimp Bouillon cube in hot water.
  6. Heat 1 tablespoon of oil in a large frying pan, add green bell pepper and onion, and sauté over medium-high heat until slightly browned, about 3-4 minutes.
  7. Add minced garlic and Italian Herb Blend, and cook for an additional 1-2 minutes.
  8. Add drained tomatoes and 1/2 cup shrimp bouillon mixture and simmer over low heat for about 10 minutes.
  9. While it simmers, wash the spinach if needed.
  10. In another frying pan, heat the second tablespoon of oil and wilt the spinach, turning frequently, in about 1-2 minutes.
  11. After the 10 minutes of cooking, add shrimp and capers, cooking just until shrimp turn pink and firm, about 3-4 minutes.
  12. Season with salt and pepper to taste.
  13. Divide wilted spinach into four bowls and top with 1/4 of the shrimp mixture. Serve hot.

Notes

  • Use chicken or fish stock instead of shrimp bouillon if preferred.
  • Most shrimp come deveined now, but check to be sure.
  • Use slightly less oil for a non-stick pan if desired.
