This Pumpkin Pecan Loaf is a delicious dessert perfect for fall.

- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup chopped pecans (toasted)
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup powdered sugar (for glaze)
- 2 tbsp milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together the pumpkin puree, eggs, and vegetable oil until smooth.
- In another bowl, combine flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined; then gently stir in the chopped pecans.
- Pour the batter into the prepared loaf pan and bake for 60–70 minutes or until a toothpick inserted comes out clean.
- Allow to cool on a wire rack before drizzling with the glaze made from mixing powdered sugar and milk.

- This loaf is perfect for breakfast or as a snack with coffee.
