Description

Deliciously creamy mashed potatoes infused with browned butter and fresh herbs.


Ingredients

Scale
  • 2 lbs Russet potatoes, peeled and chopped
  • 1/2 cup unsalted butter (1 stick)
  • 1/4 cup heavy cream
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • to taste Salt and pepper

Instructions

  1. Boil the peeled and chopped potatoes in salted water for 15-20 minutes until tender.
  2. While the potatoes are boiling, melt the butter in a saucepan over medium heat until browned (5-7 minutes).
  3. Drain the cooked potatoes, return them to the pot, and mash with the brown butter, heavy cream, salt, and pepper until smooth.
  4. Gently fold in the chopped thyme and rosemary.
  5. Transfer the mashed mixture to a greased baking dish and bake at 375°F for 25-30 minutes until bubbly and golden.

Notes

  • For added flavor, you can use garlic mashed in with the potatoes.
  • These mashed potatoes pair wonderfully with roasted meats.
