Description
A deliciously sweet and spicy chicken bowl served over jasmine rice with sautéed vegetables.

- 2 large chicken breasts, boneless and skinless
- 1 cup cooked jasmine rice
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 3 tablespoons olive oil, divided

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/3 cup hot honey (store-bought or homemade)
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- for garnish Fresh cilantro
- for garnish Sesame seeds
- for serving Lime wedges
Instructions
- Begin by marinating the chicken. In a small bowl, mix together the hot honey, soy sauce, and apple cider vinegar. Place the chicken breasts in a zip-lock bag or a shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator.
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Toss in the sliced red onion, bell pepper, and broccoli florets. Season with a pinch of salt and black pepper. Sauté the vegetables for about 5-6 minutes until they are tender but still crisp.
- While the vegetables are cooking, return to the reserved marinade. Pour it into a small saucepan and bring it to a simmer over medium heat. Allow it to thicken slightly for about 2-3 minutes, then remove from heat.
- To assemble the hot honey chicken bowls, start by adding a scoop of jasmine rice to each bowl. Top with sautéed vegetables and sliced chicken. Drizzle the thickened hot honey marinade generously over the chicken and vegetables.
- Garnish each bowl with fresh cilantro, sesame seeds, and serve with lime wedges on the side for an extra burst of flavor.
Notes
- Make sure to marinate the chicken for at least 30 minutes for maximum flavor.
- This dish can be easily customized with your favorite vegetables.
