Description

A deliciously sweet and spicy chicken bowl served over jasmine rice with sautéed vegetables.


Ingredients

  • 2 large chicken breasts, boneless and skinless
  • 1 cup cooked jasmine rice
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil, divided
  • to taste Salt and black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/3 cup hot honey (store-bought or homemade)
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • for garnish Fresh cilantro
  • for garnish Sesame seeds
  • for serving Lime wedges

Instructions

  1. Begin by marinating the chicken. In a small bowl, mix together the hot honey, soy sauce, and apple cider vinegar. Place the chicken breasts in a zip-lock bag or a shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator.
  2. Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil. Toss in the sliced red onion, bell pepper, and broccoli florets. Season with a pinch of salt and black pepper. Sauté the vegetables for about 5-6 minutes until they are tender but still crisp.
  4. While the vegetables are cooking, return to the reserved marinade. Pour it into a small saucepan and bring it to a simmer over medium heat. Allow it to thicken slightly for about 2-3 minutes, then remove from heat.
  5. To assemble the hot honey chicken bowls, start by adding a scoop of jasmine rice to each bowl. Top with sautéed vegetables and sliced chicken. Drizzle the thickened hot honey marinade generously over the chicken and vegetables.
  6. Garnish each bowl with fresh cilantro, sesame seeds, and serve with lime wedges on the side for an extra burst of flavor.
