Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until they are smooth and creamy.
  3. Add in the rolled oats, nut butter, vanilla extract, and salt. Mix everything together until you have a thick batter—it should hold well.
  4. If you’re adding chocolate chips or dried fruits, fold them in gently to mix evenly throughout the batter.
  5. Using a tablespoon, scoop out portions of the dough and place them onto the prepared baking sheet, giving each cookie about an inch of space between them.
  6. Pop them in the oven and bake for about 10-12 minutes or until they turn golden brown.
