Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the egg, sugars, pumpkin puree, oil, and vanilla extract until smooth.
- In another bowl, combine the flour, baking powder, baking soda, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into a greased baking pan and sprinkle the cinnamon-sugar mixture on top.
- Bake for about 25-30 minutes or until a toothpick comes out clean.
Notes
- This recipe can be adjusted for different sweetness levels by altering the sugar amount.
- For a richer flavor, substitute half of the oil with melted butter.
