Ingredients

  • 1/2 cup canned pumpkin puree
  • 1/4 cup neutral oil (such as canola)
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 2 to 3 tbsp cinnamon-sugar mixture

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the egg, sugars, pumpkin puree, oil, and vanilla extract until smooth.
  3. In another bowl, combine the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into a greased baking pan and sprinkle the cinnamon-sugar mixture on top.
  6. Bake for about 25-30 minutes or until a toothpick comes out clean.
