Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup unsalted butter, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 23 tablespoons heavy cream or milk

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment or grease.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, mix melted butter with brown and granulated sugars until smooth.
  4. Add eggs and vanilla extract, beat until well combined.
  5. Fold in dry ingredients until just combined.
  6. Stir in grated carrots evenly throughout the batter.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 25–30 minutes or until a toothpick inserted comes out clean. Cool completely.
  9. Beat cream cheese until smooth, then gradually add powdered sugar and mix until fluffy.
  10. Add vanilla and cream to reach desired frosting consistency.
  11. Frost the cooled bars evenly.
  12. Cut into squares and serve or store chilled.
