- 2 cups all-purpose flour
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup unsalted butter, melted
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups grated carrots
- 8 ounces cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 2–3 tablespoons heavy cream or milk
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment or grease.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, mix melted butter with brown and granulated sugars until smooth.
- Add eggs and vanilla extract, beat until well combined.
- Fold in dry ingredients until just combined.
- Stir in grated carrots evenly throughout the batter.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes or until a toothpick inserted comes out clean. Cool completely.
- Beat cream cheese until smooth, then gradually add powdered sugar and mix until fluffy.
- Add vanilla and cream to reach desired frosting consistency.
- Frost the cooled bars evenly.
- Cut into squares and serve or store chilled.
Notes
- These bars can be stored in the refrigerator for up to 5 days.
- Feel free to add nuts or raisins for extra texture.
