Description

Delicious and moist chocolate chip banana muffins made with ripe bananas.


Ingredients

  • 1½ cups all purpose flour (180 grams)
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1 cup mashed banana (from about 3 very ripe bananas)
  • ⅔ cup sugar
  • 5 tbsp melted butter
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup semisweet chocolate chips
  • ½ cup milk chocolate chips (plus more for topping)
  • Coarse sugar (optional, for topping)

Instructions

  1. Preheat the oven to 375°F. Line a standard 12-count muffin pan with liners.
  2. In a medium bowl, whisk the flour, baking soda, cinnamon, and salt.
  3. In a large bowl, whisk the mashed bananas, sugar, melted butter, egg, and vanilla extract. Add the dry ingredients to the wet and whisk or stir until just combined.
  4. Fold in the chocolate chips until evenly distributed.
  5. Divide the batter between the muffin cups and top with extra chocolate chips and coarse sugar, if using.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of the muffin comes out clean. Let cool for 5 minutes in the pan before transferring to a wire rack to cool completely. Enjoy!
