Key Ingredients for Sweet and Sour Beef:

Beef: The star of our sweet and sour beef dish is, of course, the beef itself. I recommend using a tender cut like flank steak or sirloin, which will become juicy and flavorful after slow cooking. The secret is to slice it against the grain; this keeps each bite tender and delicious.

Bell Peppers: Vibrant bell peppers add both color and crunch. I typically use a mix of red and yellow for a visually striking dish, but feel free to use green if that’s what you have on hand. The peppers soften beautifully in the slow cooker, balancing the dish’s sweetness with their natural flavor.

Pineapple Juice: For that signature tanginess, pineapple juice plays a crucial role. It not only tenderizes the beef but also infuses the dish with that distinctive sweet flavor that pairs perfectly with the savory elements.

Soy Sauce: A splash of soy sauce deepens the umami, enhancing the overall richness of your sweet and sour beef. It brings depth and a hint of saltiness, creating a harmonious balance with the sweetness.

Brown Sugar: This ingredient brings a consistent sweetness to the sauce, complementing the pineapple juice beautifully. It caramelizes slightly during cooking, allowing the flavors to meld together wonderfully.

Vinegar: To add that quintessential tang, I opt for rice vinegar. It adds a pleasant acidity that cuts through the richness of the beef and balances the sweetness, making each bite crave-worthy.

With these ingredients, you’re well on your way to crafting a delightful sweet and sour beef dish that will impress your friends and family!

Cooking Tips and Notes for Sweet and Sour Beef

When you dive into making sweet and sour beef, you’re not just preparing a dish; you’re crafting a flavorful story that can light up your dinner table. This recipe is perfect for connecting flavors and stories that entice the senses.

Choosing the Right Beef

For the best results, I recommend using flank steak or sirloin. These cuts are tender and absorb flavors beautifully during slow cooking. If you prefer more marbling, a chuck roast can also add richness to your sweet and sour beef. Always slice against the grain for a tender bite.

Balancing the Sweet and Sour

The key to mastering sweet and sour beef lies in balance. Make sure to taste the sauce as it cooks; if it leans too sweet, add a bit more vinegar or lime juice. Conversely, if it’s too tangy, a touch more sugar can bring harmony.

Veggies Matter

Don’t skimp on the vegetables! Bell peppers, onions, and carrots add not just color but also layers of flavor. Toss in some pineapple chunks toward the end of cooking for an extra layer of sweetness that complements the beef wonderfully.

Slow Cooker Secrets

Layer your ingredients wisely. Place beef at the bottom of the slow cooker so it can absorb the sauce fully, followed by veggies. This ensures everything cooks evenly, letting the flavors meld perfectly.

Remember, make it your own! Add your favorite veggies or adjust the sweetness as you see fit, and you’ll savor every bite of your delicious sweet and sour beef.

Description

A delicious and tender sweet and sour beef recipe made in a slow cooker.

Ingredients

Scale
  • 4 lb. boneless chuck roast, trimmed well
  • 2 tsp. olive oil
  • 1 steak rub, to season meat
  • to taste black pepper, to season meat
  • 1 T onion powder
  • 1 T garlic powder
  • 2 T ginger puree
  • 2 T Monkfruit Sweetener or sweetener of your choice
  • 1/4 cup unseasoned rice vinegar
  • 14 oz. can crushed tomatoes
  • 2 T soy sauce
  • 1 tsp. anchovy paste, optional

Instructions

  1. Trim as much fat as you can from roast, and cut if necessary to fit into Crockpot. Rub meat well with steak seasoning and black pepper.
  2. Heat olive oil in a large frying pan and brown roast well on both sides. This will take a few minutes; don’t rush the browning step. Put browned roast into slow cooker.
  3. Deglaze the pan while meat browns, combine onion powder, garlic powder, ginger puree, sweetener of your choice, rice vinegar, tomatoes, soy sauce, and anchovy paste (if using) in food processor. Process several minutes with steel blade until tomatoes are pureed and ingredients are well combined.
  4. Put the pureed sauce into the frying pan where you browned the meat and simmer on low heat until the sauce thickens; you should be able to draw a spoon through it and have the sauce stay together.
  5. Once it’s thickened to that point, pour sauce mixture over the meat in the slow cooker.
  6. Cook on low 7-8 hours (or more) or on high for 3-4 hours, or until meat is very tender. If home, turn it a couple of times, but it’s not necessary.
  7. Remove meat from slow cooker and keep warm. Skim off any visible fat from sauce mixture if needed, or use a fat separator.
  8. Slice the pieces of roast and serve the Sweet and Sour Beef hot, with sauce spooned over the meat.

Notes

  • Use your favorite steak rub for seasoning according to your taste.
