  • Beef: Tender cuts, like chuck or flank steak, work perfectly in this slow cooker recipe. Make sure to cut your beef into bite-sized pieces for that melt-in-your-mouth experience.

  • Bell Peppers: I love using a mix of red and green bell peppers. Their crunch adds texture and color, truly enhancing the Sweet and Sour Beef experience.

  • Soy Sauce: This salty staple infuses the dish with umami flavor. Opt for low-sodium versions if you’re watching your salt intake.

  • Vinegar: A splash of rice vinegar adds the signature tanginess, brightening up the sweet notes from the sauce and pineapple.

Cooking Tips and Notes for Sweet and Sour Beef

Creating the perfect sweet and sour beef in a slow cooker is as much an art form as it is a cooking task. Here are some insider tips to elevate your dish from good to great.

Choose the Right Cut of Beef
For sweet and sour beef, using cuts like flank steak or chuck roast ensures a tender result that absorbs all those delightful flavors. Cooking low and slow breaks down tougher fibers, leaving you with melt-in-your-mouth meat.

Balancing Flavors is Key
The magic of sweet and sour beef lies in its harmonious balance. Don’t hesitate to tweak the balance of vinegar and sugar to suit your palate. If you prefer something sweeter, adding a little more sugar can create that desirable contrast in flavor.

Prep Your Veggies
Chopping your vegetables into uniform pieces not only makes for a visually appealing dish but also ensures even cooking. Bell peppers and onions can soak up the sauce beautifully, enhancing the final flavor profile.

Thickening the Sauce
If you find the sauce isn’t as thick as you desire, simply mix a tablespoon of cornstarch with a bit of cold water and stir it into the slow cooker in the last 30 minutes. This will achieve that perfect glossy finish that cling to your beef.

Enjoy this flavorful journey with your sweet and sour beef, and don’t forget to make it your own!

Description

An easy and delicious slow-cooked beef dish with a sweet and tangy sauce.

Ingredients

Scale
  • 4 lb. boneless chuck roast, trimmed well
  • 2 tsp. olive oil
  • 1 steak rub, to season meat (see notes)
  • black pepper, to season meat
  • 1 T onion powder
  • 1 T garlic powder
  • 2 T ginger puree (see notes)
  • 2 T Monkfruit Sweetener or sweetener of your choice
  • 1/4 cup unseasoned rice vinegar
  • one 14 oz. can crushed tomatoes
  • 2 T soy sauce
  • 1 tsp. anchovy paste, optional

Instructions

  1. Trim as much fat as you can from roast, and cut if necessary to fit into Crockpot. Rub meat well with steak seasoning and black pepper.
  2. Heat olive oil in a large frying pan and brown roast well on both sides. This will take a few minutes; don’t rush the browning step. Put browned roast into slow cooker.
  3. Deglaze the pan while meat browns, combine onion powder, garlic powder, ginger puree, sweetener of your choice, rice vinegar, tomatoes, soy sauce, and anchovy paste (if using) in food processor. Process several minutes with steel blade until tomatoes are pureed and ingredients are well combined.
  4. Put the pureed sauce into the frying pan where you browned the meat and simmer on low heat until the sauce thickens; you should be able to draw a spoon through it and have the sauce stay together.
  5. Once it’s thickened to that point, pour sauce mixture over the meat in the slow cooker.
  6. Cook on low 7-8 hours (or more) or on high for 3-4 hours, or until meat is very tender. (If I’m home I usually turn it a couple of times, but it’s not necessary.)
  7. Remove meat from slow cooker and keep warm. Skim off any visible fat from sauce mixture if needed, or use a fat separator.
  8. Slice the pieces of roast and serve the Sweet and Sour Beef hot, with sauce spooned over meat.

Notes

  • Use your favorite steak rub or create your own with salt, pepper, and spices.
  • You can adjust the sweetness by choosing a different sweetener based on personal preference.
