Explore Different Flavor Profiles

  1. Fruity Twist: Instead of traditional bell peppers, experiment with grilled pineapple or mango chunks. These fruits add a refreshing sweetness that complements the tangy sauce beautifully.

  2. Spicy Kick: For those who like a little heat, toss in some sliced jalapeños or red pepper flakes. The spiciness balances the sweetness and adds depth to the overall flavor.

  3. Asian Fusion: Incorporate a splash of soy sauce or sesame oil to give your Sweet and Sour Beef an Asian-inspired twist. This subtle change not only enhances the umami notes but also introduces new layers of flavor.

  4. Vegetarian Alternative: If you’re interested in a meat-free option, replace the beef with tofu or seitan. Both proteins absorb flavors remarkably well, allowing you to enjoy the same beloved taste while catering to a vegetarian lifestyle.

Cooking Tips and Notes

Slow cooking Sweet and Sour Beef is an enchanting way to let the flavors unfold and mingle seamlessly. To make the most of your slow cooker experience, let’s dive into some essential tips that will elevate your dish to the next level.

Get the most out of your slow cooker

  • Layer Wisely: Start with the vegetables at the bottom of your slow cooker, as they take longer to cook than the meat. This ensures even cooking and that rich flavor distribution we all crave.

  • Choose the Right Cut of Beef: Cuts like chuck roast or brisket are ideal for slow cooking. They’re tougher but become incredibly tender over the hours, soaking up the sweet and sour flavors beautifully.

  • Thicken Sauces Naturally: If you prefer a thicker sauce, mix a tablespoon of cornstarch with cold water and stir it in during the last 30 minutes of cooking. This method keeps your sauce both glossy and delicious.

  • Don’t Overcrowd: Avoid the temptation to pack the slow cooker too full. Overcrowding can lead to uneven cooking and dilutes the flavors. Stick to the recommended quantities for best results.

  • Timing is Key: Invest in a good timer or use the pre-set functions on your slow cooker. Proper timing will ensure your Sweet and Sour Beef reaches optimal flavor without overcooking.

By following these simple yet impactful tips, your Sweet and Sour Beef will surely become a comforting staple in your culinary repertoire. Enjoy the process and relish every flavorful bite!

  • Stir-Fried Veggies: Brighten your plate with a side of stir-fried vegetables. Broccoli, bell peppers, and snap peas add not only color but also a crunch that contrasts nicely with the tender beef. Plus, the added nutrients enhance your meal’s overall appeal.

  • Spring Rolls: For a starter or side, crispy spring rolls can serve as a delightful precursor. Filled with veggies and perhaps some shrimp, they make for a perfect appetizer that complements the meal’s tropical flavors.

  • Chilled Drinks: Offer a refreshing drink, like iced tea or a lightly sweetened lemonade, to cleanse the palate between bites. The tartness of lemonade echoes the sweet and sour profile of the dish, creating a harmonious dining experience.

Description

A delicious slow-cooked sweet and sour beef dish made with boneless chuck roast and a flavorful sauce.

Ingredients

Scale
  • 4 lb. boneless chuck roast, trimmed well
  • 2 tsp. olive oil
  • 1 steak rub, to season meat (see notes)
  • black pepper, to season meat
  • 1 T onion powder
  • 1 T garlic powder
  • 2 T ginger puree (see notes)
  • 2 T Monkfruit Sweetener or sweetener of your choice
  • 1/4 cup unseasoned rice vinegar
  • one 14 oz. can crushed tomatoes
  • 2 T soy sauce
  • 1 tsp. anchovy paste, optional

Instructions

  1. Trim as much fat as you can from the roast, and cut if necessary to fit into the Crockpot. Rub meat well with steak seasoning and black pepper.
  2. Heat olive oil in a large frying pan and brown roast well on both sides. This will take a few minutes; don’t rush the browning step. Put browned roast into the slow cooker.
  3. Deglaze the pan while meat browns, combine onion powder, garlic powder, ginger puree, sweetener of your choice, rice vinegar, tomatoes, soy sauce, and anchovy paste (if using) in food processor. Process several minutes with the steel blade until tomatoes are pureed and ingredients are well combined.
  4. Put the pureed sauce into the frying pan where you browned the meat and simmer on low heat until the sauce thickens; you should be able to draw a spoon through it and have the sauce stay together.
  5. Once it’s thickened to that point, pour sauce mixture over the meat in the slow cooker.
  6. Cook on low 7-8 hours (or more) or on high for 3-4 hours, or until meat is very tender. (If I’m home I usually turn it a couple of times, but it’s not necessary.)
  7. Remove meat from slow cooker and keep warm. Skim off any visible fat from the sauce mixture if needed, or use a fat separator.
  8. Slice the pieces of roast and serve the Sweet and Sour Beef hot, with sauce spooned over meat.
